Dried Anchovy Cookies: A Good Combination of Fish and Dessert offered by PKRU and Koh Yao Noi Community

Living in the embrace of the Andaman Sea, generations of people on Koh Yai Noi Island have inherited traditional fishery skills to generate money for their families. Even though tourism has seasonally brought them more income, fishery is still their main career. 


The abundant sea makes the island a good source of fresh seafood and seafood products; one of the ‘Must Try’ products is the sun-dried anchovy with its salty–sweet taste and crispy texture recalling the feeling of the sea. However, the islanders are unable to fulfill the demand for the anchovies due to the geological condition of the island that naturally limits the production of the product during the long monsoon season; plus, the unstable purchasing price fixed by the middlemen which is a result of the highly competitive market.

Realizing this problem, the Research and Development Institute at Phuket Rajabhat University had led the lecturers and students to work with the career cluster on the island to produce alternative products that meet the needs of consumers of any ages, are convenient, have long expiration periods and good prices, and of course present the uniqueness of the island. This was the beginning of the brand-new Le’ RIMLAY cookies with anchovies as the signature ingredient.   
 
In the early stage of product development, the PKRU team was struggling with how to perfectly present the unique taste of the dried anchovies in the cookies. They, therefore, led the lecturers and the students from Home Economics Program and Creative Product Innovation Program in the Faculty of Science and Technology, to brainstorm with the islanders. Ajarn Kamonwan Suksawat, the lecturer at Home Economics Program, and her students, have been working to create the perfect recipe of crispy butter anchovy cookies; they finally found that the best ratio of the anchovy powder mixed in the recipe is 10%. As a result, the cookies offer good nutrients of Omega–3, Calcium, Potassium along with the smell of anchovies and butter cooky texture with 3-month expiration period. Meanwhile, Asst. Prof. Phurinat Paladsongkram, the lecturer at Creative Product Innovation Program, has created the cooky package based on the needs of the islanders in selling the cookies to tourists in outstanding packages so they are easy to sell in the online market.

Le’ RIMLAY is established under the concept of the precious thing (Ler Ka in Thai) from the sea (Lay); not only the anchovy cookies, PKRU team and the islanders will never stop working on developing and promoting the new seafood products under this brand.

This effort of the PKRU is providing community service with the body of knowledge, research, and instruction. The university has been working in assisting many local communities according to its Local Development Strategy (Andaman Region) and will definitely upgrade itself to the provider of ‘One Stop Service’ in product design, manufacturing, and standard certifying.
